Recipe
Potato Pocket Recipe
5 medium russet potatoes
1 large white onion
1 large green bell pepper
1/3 cup extra virgin olive oil
1 teaspoon garlic paste
1/2 teaspoon finely ground black pepper
1/2 teaspoon salt
Chop potatoes, onion, and bell pepper into bite size chunks. Place veggies in a bowl and stir in oil, garlic, pepper and salt. Tear off four sections of foil, one foot long each. Place 1/4 of the veggie mixture into a piece of foil. Fold the foil over to create a secure packet. Repeat process for the remaining three pieces of foil. Keep packet frozen until time to cook.
When it comes time to cook the packets, make sure to thaw them out if frozen. Once thawed, open a small hole in the foil to let steam escape. Place the packets, hole side up, on a grill, stove or next to a fire. Cook about 30 minutes, turning the packet every ten minutes. Make sure the hole side always faces up. Once veggies are steaming and tender, the meal is done. Makes four servings.
