Recipe
Irish Baileys Cream cheesecake
oz crushed vanilla cookies3 ½ oz melted butter5 ½ oz sugar1 lb cream cheese1 cup boiling water1 envelope gelatin½ cup Baileys Irish CreamWhipped cream, to garnishChocolate syrup or chocolatemint candies, to garnish
Combine the cookies with the butter and press the mixture into an 8 inch spring form pan.
Freeze it for 15 minutes until it sets.
Pour the boiling water over the gelatin and sugar and stir until the gelatin dissolves.
Beat the Baileys into the cream cheese and add the gelatin mixture gradually.
Pour this mixture into the crust and chill overnight or for at least a few hours.
Garnish with whipped cream and some chocolate syrup or chocolatemints candies before serving.
(Serves 6)
