Recipe
Chicken Fajitas
1 package Boneless Skinless Breast Tenders
8 6-inch corn or low-fat flour tortillas
1 large red onion
1 large green bell pepper
1 large yellow or orange bell pepper
2 tablespoons vegetable oil
Marinade2 tablespoons Worcestershire sauce
1 1/2 tablespoons fresh lemon or lime juice
1 tablespoon water
1 medium garlic clove, finely minced
1/8 teaspoon pepper
1. Preheat oven to 375°F. Wrap tortillas in aluminum foil. Place breast tenders in an airtight plastic bag or glass-baking dish. 2. In a small bowl, combine marinade ingredients. Pour over chicken and turn to coat. Seal and refrigerate for 10 to 20 minutes, turning at least once.3. Meanwhile, slice onion and bell peppers into 1/8-inch strips. Place in a small bowl and mix with 1 tablespoon of vegetable oil. Set aside. 4. Heat tortillas in oven for 8 to 10 minutes. Meanwhile, heat a nonstick skillet with 1 tablespoon of vegetable oil over medium heat and cook chicken tenders for 3 to 5 minutes or until cooked, stirring occasionally. Add onion and bell peppers to skillet and cook over medium heat for 3 to 5 minutes until onion is slightly brown, stirring constantly.
5. To serve, place equal amounts of cooked chicken strips in each tortilla. Top with onion and bell peppers. Roll tortillas around chicken strips and enjoy.
