Recipe
Chocolate Espresso bars
3/4 cup all purpose flour
1/2 cup Dutch process cocoa powder
3 tbs instant espresso powder
1/4 tsp baking powder
1/4 tsp salt
1 stick (8 tbsp) unsalted butter, cut into pieces
2 oz semisweet chocolate, coarsely chopped
2 eggs
1 cup firmly packed brown sugar
1 tsp vanilla extract
For glaze:
1/4 cup heavy cream
1 tsp instant espresso powder
4 oz semisweet chocolate, chopped
pinch of salt
Grease an 8x8 square baking pan.
Heat oven to 350 F.
Sift together the flour, cocoa powder, espresso powder, baking powder, and salt in a bowl.
In a small saucepan over low heat, combine butter and chocolate, stir Until melted
Remove from heat and let cool a little.In a bowl, whisk together eggs and brown sugar until blended. Gradually stir in the chocolate mix until combined. Then, stir in the vanilla. Then, add the flour mix and stir until blended.Pour batter into prepared pan. Bake until edges slightly pull away from sides of pan and the center is springy to touch, about 25 minutes.
Transfer the pan to a rack to cool completely.For glaze: In a small saucepan over medium heat, combine cream and espresso powder. Stir until powder dissolves and bubbles start to appear around the edges of the pan. Add chocolate and salt and remove from heat. Stir just until chocolate is melted. Let cool to room temperature. Using a small offset spatula, spread the cooled glaze over the cookie in a thin layer. Put in fridge until glaze is set, about 30 minutes.
