May there always be work for your hands to do, May your purse always hold a coin or two. May the sun always shine warm on your windowpane, May a rainbow be certain to follow each rain. May the hand of a friend always be near you, And may God fill your heart with gladness to cheer you

Irish Potato Farls
1 1/4 pounds potatoes (about 4 medium potatoes)

2 teaspoons melted butter

1 cup of flour

1/2 teaspoon salt

4 teaspoons of vegetable or canola oil

Peel and half the potatoes and boil in water for 20 minutes or so until soft. Drain and then add the butter and mash thoroughly. Add the flour and salt and mix. Divide the mixture in half and put the first half on a lightly floured surface. Knead until flat - approx 1/4 inch thick. Divide into 4. Repeat the process for the other half of the mixture. Fry/Griddle using the oil for about 2 minutes or until crispy brown on each side. Serve warm.

This Irish potato recipe makes about 8 Potato Farls.

Ginger, thanks once more for all the interesting links. I love the link with all the black and white cartoon pics. Yes we've come a long way from those black and white cartoons ... they look so primitive now but they still have a very special place in the history of the cartoon.
Have a happy weekend!
