Recipe
Carror Date bars
1 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup honey
1 teaspoon vanilla extract
1 cup dates, chopped
1 cup carrots, shredded
1/2 cup walnuts, chopped
In large bowl, mix flour, baking powder and salt. In small bowl, beat eggs, honey and vanilla until creamy. Add to flour mixture, stirring until well blended. Stir in dates, carrots and walnuts. Spoon into greased small baking pan, spread evenly. Bake in preheated 350 F (180 C) oven for 30 minutes. Cool completely on wire rack and cut into bars.
