sugared bacon makes a tasty snack

1cup packed dark brown sugar

1 pound thick sliced bacon

In a bowl or container, combine the bacon slices and brown sugar, thoroughly coating the bacon slices. Cover and let stand until the sugar melts and becomes syrupy. Heat oven to 350°. Place a rectangular cake cooling rack in a roasting pan or large jelly roll pan. Arrange the bacon on the rack. Alternatively, you may use a broiler pan. Bake the bacon for about 16 to 20 minutes, then increase the temperature setting to broil. Broil for about 2 minutes, or until bacon is crisp. Drain on paper towels and cut into bit size pieces or use longer pieces to wrap appetizer portions or chicken, meatballs, scallops, or pork.
