Recipe
Mexican tortilla appetizer
6 flour tortillas

1 Refried Beans

1/2 cup Taco Sauce

1/2 cup chopped green bell pepper

1/2 cup chopped red bell pepper

3 green onions, sliced

1/4 teaspoon crushed red pepper (optional)

2 cups shredded Monterey Jack or Mexican blend cheese
Preheat oven to 400°F (205°C). Place tortillas on baking sheet(s).
Bake for 3 to 4 minutes or until crisp.
Spread beans evenly over tortillas. Spread taco sauce evenly over beans. Top with bell peppers, green onions and crushed red pepper. Sprinkle with cheese.
Bake for 7 to 8 minutes, or until cheese is melted. Cut into wedges.

Frito Pie
3 cups Fritos corn chips
3/4 cup chopped onion
1 cup grated cheddar cheese
2-1/2 cups chili (your favorite -- homemade, canned
Preheat oven to 350°F. Spread 2 cups of Fritos in a baking dish (an 8-inch dish works great). Sprinkle half the onion and half the cheese over the Fritos. Pour the chili over the onion and cheese. Sprinkle the remaining Fritos, onion and cheese over the chili. Bake for 15 or 20 minutes and cheese is bubbly. Serve hot.
