Tips

Recipe
Cajun Sausage & Rice
INGREDIENTS
1 box (8 oz) red beans and rice mix
1 tsp olive oil
2 bell peppers, cut bite-size
4 fully cooked spicy beef sausages (from a 14-oz pkg), sliced Sliced scallions (optional) PREPARATION

1. Bring 31/2 cups water to a boil in a large saucepan. Add rice mix, reduce heat, cover and simmer 10 minutes.2. Meanwhile heat the oil in a large nonstick skillet over medium-high heat. Add peppers; sauté 5 minutes or until lightly charred in a few places. Add sausage; sauté 3 minutes or until lightly browned.3. Place mixture on rice (don’t stir), cover and simmer 10 minutes until rice is tender. Stir to mix; sprinkle with scallions, if using.
