Pita Pesto Pizza
Ingredients
2 large pita bread rounds
4 tablespoons prepared pesto
3/4 cup prepared tomato sauce
1/2 lb. fresh mozzarella cheese, sliced
10 crimini mushrooms, sliced
1 small red onion, sliced
12 Lindsay® Ripe Pitted Olives, thickly sliced
8 basil leaves, thinly sliced
Directions:
Heat oven to 500°F. Spread pesto, then tomato sauce over pita bread. Top evenly with cheese, mushrooms, onion, olives and basil. Cut basil leaves into ribbons and place on top. Bake 8 to 10 minutes or until heated through. Cut each pita into quarters.

Guilty of the rubberband pants thing!! I lived in La La Land for a bit thinking I could still fit into a 9. It does work and no one else knows!!
