lemon wedges
In a saucepan simmer ginger and water 20 minutes, or more for stronger tea. Add honey or sugar and strain tea through a sieve set over a teapot. Serve tea garnished with lemon wedges.

Gumdrop Fudge
1-1/2 pounds white candy coating, coarsely chopped
1 can (14 ounces) sweetened condensed milk
1/8 teaspoon salt
1-1/2 teaspoons pure vanilla extract
1-1/2 cups chopped gumdrops
Line a 9-in. square pan with foil; set aside. In a heavy saucepan, combine the candy coating, milk and salt. Cook and stir over low heat until chips are melted. Remove from the heat; stir in vanilla and gumdrops.
Spread into prepared pan. Cover and refrigerate until firm. Using foil, remove fudge from the pan; cut into 1-in. squares. Store at room temperature. Yield: about 3 pounds.

Dipped Bon Bon Candy Balls
1 stick butter, melted

2 lb. confectioners' sugar

1 (7 oz.) can coconut

1 can condensed milk

2 tsp. vanilla

1 1/2 c. chopped nuts
Mix butter, sugar and milk. Add coconut, vanilla and nuts. Chill. Roll into small balls. Chill again. Melt 3/4 cake of paraffin with 12 ounce chocolate chips over hot water. Place toothpick in each ball, dip in chocolate. Drop on wax paper and let dry.

1 1/2 cups shredded Cheddar cheese

1 (8 ounce) box chicken-flavored crackers
Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

Chicken or turkey popovers
1 package pilsbury crescent rolls
filing
1 cup cooked turkey or 1 cup cooked chicken
1 cup shredded cheese
1/4 cup canned mushroom slices
1 teaspoon finely chopped green onions
mayonnaise, to moisten
salt and pepper
Homemade creswnt rolls
cups flour, sifted
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cooking oil
3/4 cup milk
Preheat oven to 400 degrees.
For the filling mix the turkey or chicken, cheese, mushrooms, green onion, mayonnaise, Salt, and Pepper until well blended If Using Crescent Rolls: Take dough out of tube.
Flatten each triangle as much as possible, then spoon filling into center and fold over corners.
Now skip to step 12
Dough: Sift together the flour, baking powder and salt, then add the oil and cut it in until mixture is like a coarse meal.
Add the milk all at once and stir until it forms a soft ball.
Turn the dough out on a floured board and knead lightly 20-25 times.

Heat oven to 375° F. On a large rimmed baking sheet, toss the carrots and orange with the oil, honey, 1 teaspoon salt, and ¼ teaspoon pepper.
Roast, tossing once, until tender, 30 to 35 minutes. Sprinkle with the dill.

Caramelized Brussels Sprouts with Lemon
12 ounces Brussels sprouts, halved lengthwise, or quartered if large
Coarse salt and ground pepper
2 tablespoons olive oil
1 tablespoon fresh lemon juice, plus lemon wedges, for serving
In a skillet, combine sprouts and 1/2 cup water; season with salt and pepper. Bring to a simmer over medium heat. Cover; cook, stirring occasionally, until most of the water has evaporated and sprouts are crisp-tender, 5 to 8 minutes (add 1/4 cup more water if skillet becomes dry before sprouts are done).
Increase heat to medium-high; add oil to skillet. Continue to cook, uncovered, without stirring, until sprouts are golden brown on underside, 5 to 7 minutes. Remove from heat. Stir in lemon juice; season with salt and pepper. Serve with lemon wedges.

Rachael Ray's pimento cheese sandwiches

2 cups shredded cheddar cheese (I used sharp)
1 cup shredded smoked gouda cheese
1/2 cup mayo
1/2 t paprika
1/2 t salt
1/2 t onion powder
1 jar (4 oz) diced pimientos, drained
14 slices rye or pumpernickel bread
In a blender or food processor, mix the cream cheese, cheddar, gouda, mayo, paprika, salt and onion powder til smooth. Stir in the pimientos.
Spread the cheese mixture on half of the bread slices; top with the remaining bread slices.

Recipe
Orange pudding
3 oranges1 1/4 pints milk1 1/2 oz cornflour1 oz butter3 oz sugar2 eggspinch of salt
Peel the oranges, cut in pieces and place in a buttered dish.
Mix cornflour with a little of the milk.
Boil remainder of milk, add to the cornflour paste and cook for 10 minutes, stirring constantly.
Add the butter and a pinch of salt.
Sprinkle a little sugar over the oranges.
Mix the rest of the sugar with the yolks of the eggs, and add to the milk and cornflour mixture.
Stir for a minute or two longer over the fire without boiling.
Pour over the oranges and bake for 10 minutes.
Beat the egg whites stiffly, fold in a little castor sugar, pie on top and return to cool oven
for abut 10 minutes, to set and tinge a very pale brown.

Carrot Pistachio cupcakes
3 cups unbleached all-purpose flour

1 1/2 cups sugar

1/2 cup dark brown sugar

1 tablespoon baking soda

2 teaspoons baking powder

1 1/2 teaspoons salt

1 1/2 teaspoons cinnamon

1 teaspoon fresh-grated nutmeg

1/2 teaspoon allspice

3 cups grated carrots
1 1/2 cups chopped dried apricots

1 1/2 cups chopped pistachios

4 large organic eggs

1 1/2 cups olive oil

1/2 cup organic milk

2 tablespoons pure vanilla extract
1. Make the batter: Heat oven to 350°F. Butter two 8-inch round cake pans and line an 8-cup muffin pan and set aside. Combine the flour, sugars, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice in a large bowl. Toss the carrots, apricots, and nuts in the flour mixture and set aside. Whisk together the eggs, olive oil, milk, and vanilla in a medium bowl and add to the flour mixture. Stir until just combined. Transfer 3 cups of batter to each cake pan and 1/4 cup batter to each cupcake liner. Bake the cakes until a toothpick inserted in center comes out clean - about 40 minutes for cakes and 20 minutes for cupcakes. Cool cakes in the pans on a wire rack for 20 minutes. Release cakes from pans and cool completely on the rack.

6 flour tortillas

1 Refried Beans

1/2 cup Taco Sauce

1/2 cup chopped green bell pepper

3 green onions, sliced

2 cups shredded Monterey Jack or Mexican blend cheese
Preheat oven to 400°F (205°C). Place tortillas on baking sheet(s).

Spread beans evenly over tortillas. Spread taco sauce evenly over beans. Top with bell peppers, green onions and crushed red pepper. Sprinkle with cheese.
Bake for 7 to 8 minutes, or until cheese is melted. Cut into wedges.

Store the mixture in an airtight container or in a zip-close bag.
Season your fajita. Use 2 or 3 tbsp. per fajita serving. After you've made the main fajita - the meat, onions, peppers and anything else that you're frying - spread your tortilla with any condiments that you like

In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in pumpkin. Combine the flour, baking powder, baking soda, cinnamon and salt; gradually add to pumpkin mixture and mix well. Stir in pecans and dates.
Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 13-15 minutes or until firm.
Meanwhile, for frosting, combine the butter, brown sugar and milk in a small saucepan. Bring to a boil over medium heat, stirring constantly; boil for 3 minutes. Remove from the heat; stir in maple flavoring and vanilla.
Cool slightly; beat in enough confectioners' sugar to achieve spreading consistency. Remove cookies to wire racks; frost while warm. Yield: 6-1/2 dozen.

Baked Corn Pudding
1/2 Cup Butter or margarine
1 small onion chopped 1/4 cup
1/2 cup flour

4cups milk

2 cups shredded cheddard cheese
2 bags frozen corn thawed
2 tablespoons parsley flakes
3/4 bread crumbs
3 tablespoons melted butter or margarine
Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish or 3-quart casserole with cooking spray.
In 4-quart Dutch oven, melt 1/2 cup butter over medium heat. Add onion; cook 3 to 4 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Stir in milk. Cook 4 to 5 minutes, stirring constantly, until thickened. Gradually stir in eggs and cheese. Stir in corn and parsley. Pour into baking dish.
In small bowl, mix bread crumbs and 3 tablespoons melted butter; sprinkle over corn mixture.
Bake uncovered 55 to 65 minutes or until mixture is set and knife inserted in center comes out clean. Let stand 5 to 10 minutes before serving.

Chicken-Fried Steak Fingers
1 1/2 lbs. top round steak, cut into 1/2 inch strips

1 egg

1 c. milk

1 c. flour

Salt and pepper

1/2 c. vegetable oil
1. Beat egg and milk together.
2. Coat strips of steak with flour, dip in egg mixture, then re-coat with flour.
3. Fry steak over medium heat in oil, until coating is brown and crispy.
4. Add salt and pepper to taste. Serve hot with mashed potatoes, cream gravy and biscuits. Serves 4-6.

Mexican Pumpkin seed Peanut brittle
1 c hulled toasted pumpkin seed shelled
1/3 cup sesame seeds, toasted
1 cup dry roasted, salted peanuts
1 teaspoon coconut oil or canola oil
1/2 c honey
1/4 chili powder(0optional)
canola oil for greasing parchment paper
grease bottom of paper with coconut oil. If not using parchment paper, grease pan very well.
Grease a flat spatula.
In a small, heavy bottom sauce pan, add the coconut oil or canola oil – turn on heat to medium high. Tilt the pan to coat bottom and sides. Add the honey and bring to a boil, while stirring. Once it begins to boil rapidly – do not stir, it will bubble and foam. Allow to boil for about 5-7 minutes (for chewy candy). For hard brittle, allow to boil for about 8 – 10 minutes – the honey will turn a deep amber (if using a candy thermometer here’s some helpful info – do not boil beyond 310 degrees F). Turn off the heat.
Add the pumpkin seeds, nuts and sesame seeds. Stir quickly with greased spatula to coatingredients. Spread onto the parchment paper lined pan. Pat it down to an even layer, working quickly.
Set aside to cool and harden for about 45minutes. Lift out the parchment paper and cut or break into pieces. Store in an airtight container.

Candied Walnuts
1 pound walnut halves
1 cup white sugar
2 teaspoons ground cinnamon
1/4 teaspoon salt
6 tablespoons milk

Preheat oven to 350 degrees F (175 degrees C). Spread nuts in a single layer over a baking sheet. Roast for approximately 8 to 10 minutes, or until the nuts start to turn brown and the smell of roasting nuts fills the kitchen.
Stir together sugar, cinnamon, salt, and milk in a medium saucepan. Cook over medium-high heat for 8 minutes, or until the mixture reaches the soft ball stage of 236 degrees F (113 degrees C). Remove from heat, and stir in vanilla immediately. .
Add walnuts to sugar syrup, and stir to coat well. Spoon nuts onto waxed paper, and immediately separate nuts with a fork. Cool, and store in airtight containers.

2 cups water

3/4 pound beef sirloin cubed
1 onion cut in wedges
2 cups broccoli, cut up
1/2 teaspoons garlic powder
1 can cream of broccoli soup
1/4 cup water
1 tablespoon soy sauce
Cook noodles according to package directions and drain. Add seasoning packet. Brown beef in oil with garlic powder. Add onion and broccoli. Cook over medium heat until tender. Add soupconcentrate, 1/4 cup water and soy sauce. Simmer ten minutes. Serve over ramen noodles.

Place sesame seeds and almonds in a single layer on a medium baking sheet. Bake in the preheated oven 10 minutes, or until lightly brown.
In a large salad bowl, combine the cabbage, green onions and crushed ramen noodles. Pour dressing over the cabbage, and toss to coat evenly. Top with toasted sesame seeds and almonds.

Carne Asada
2 pounds flank or skirt steak
Olive oil
Kosher salt and freshly ground black pepper
Marinade
4garlic cloves, minced
1 jalapeño chile pepper, seeded and minced
1 teaspoon freshly ground cumin seed
1 large handful fresh cilantro, leaves and stems, finely chopped (great flavor in the stems)
Kosher salt and freshly ground black pepper
2 limes, juiced
2 tablespoons white vinegar
1/2 teaspoon sugar
1/2 cup olive oil
Lay the flank steak in a large non-reactive bowl or baking dish. Combine marinade ingredients and pour the marinade over the steak. Make sure each piece is well coated. Cover in plastic wrap and refrigerate for 1-4 hours.
Preheat your grill over medium-high flame (you can also use a cast iron grill pan on high heat for stove-top cooking). Brush the grates with a little oil to prevent the meat from sticking. Remove the steak from the marinade. If you are cooking indoors, you may want to brush off excess marinade as the bits may burn and smoke on the hot pan. Season both sides of the steak pieces with salt and pepper. Grill the pieces for a few minutes only, on each side, depending on how thin they are, until medium rare to well done, to your preference. You may need to work in batches. Remove the steak pieces to a cutting board and let rest for 5 minutes. Thinly slice the steak across the grain on a diagonal.

Zucchini Pancakes
1 1/2 cups unpeeled zucchini grated
4 large eggs, beaten

3/4 cup all-purpose flour
1/2 teaspoon granulated sugar
1/2 teaspoon salt
3 tablespoons extra virgin olive oil
4 teaspoons baking powder
1/4 cup melted butter or margarine
Stir the eggs into the grated zucchini, then mix in the flour until all the lumps are gone. Fry the batter like pancakes with a bit of butter to keep it from sticking. Delicious topped with grated cheese.

Cut up chicken cutlets into chunks. Mix all the other ingredients together with mixer. Dip chunks into batter and fry. A deep fryer works good - but a regular frying pan will do.

Recipe
Strawberry Gelatin pie
9 inch cooked graham cracker crust pie shell
2 tablespoons corn syrup
¾ cup sugar
1 quart fresh strawberries
1 cup water
2 tablespoons cornstarch
2 tablespoons strawberry gelatin powder
1 package vanilla instant pudding (may substitute Pistachio pudding)
1¾ cups milk
1 package cream cheese (softened)
1 tsp vanilla extract
½ tsp lemon juice
Wash and trim the strawberries. Set them aside.
Combine the instant pudding, milk vanilla, according to pie directions on box in a mixer. When mixed well add the softened cream cheese and lemon juice whip on med high till well blended.
Pour this into the pie crust and chill for an hour before continuing on with the topping layer.
Combine the corn syrup, cornstarch, sugar, and water and bring the mixture to a boil.
Cook until clear and thick.
Add the gelatin powder and stir until dissolved.
Let the mixture cool.
Arrange the strawberries in the pie shell and pour the gelatin mixture over the top.
Chill until completely set and serve.
(Serves 6)

Basil Carbonara
10 slices bacon
1/4 cup fresh basil leaves
4 to 6 cloves garlic

1 pound pastaBoil water to cook pasta. Fry bacon, drain, and chop into 1/4-inch slices. Blend, process, or chop basil and garlic until finely minced. In another bowl, mix eggs and half-and-half, then add bacon, basil mixture, and grated cheese. Meanwhile, cook pasta as directed, drain, then immediately add sauce while the pasta is still hot. Cover and let sit for 2 to 3 minutes. (The hot pasta cooks the egg.) Toss and serve at once with extra Parmesan.

Combine brown sugar and cornstarch in saucepan. Add peaches and toss to coat. Cook over low heat, stirring constantly, until boiling and thick. Reduce heat and cook 2 minutes longer. Set aside.
Combine Bisquick, sugar, lemon rind. Add milk. Stir with fork until moistened. Return peaches to a boil. Pour into 2-quart oblong baking dish. Drop batter on top. Bake at 400 degrees for 20 to 25 minutes. Serve with sauce.

Crazy corn Dogs
2 tablespoons yellow cornmeal
1 can (11.5 ounces) refrigerated corn bread twists
1 package seven franks
2 tablespoons Concord grape jelly
1/2 cup Hunt's Ketchup
Preheat oven to 375° F. Sprinkle cornmeal on large cutting board. Unroll dough on cornmeal; separate dough into seven long strips.
Assemble each corn dog: Press together dough at perforations and flatten slightly. Spiral wrap one dough strip around each frank. Place on ungreased baking pan so both ends of dough are under franks. Discard remaining dough strip, or bake with wrapped franks and eat with dipping sauce.
Bake 13 to 15 minutes, or until golden brown.
Place jelly in a small, microwave-safe bowl. Microwave on high 15 to 20 seconds, or until jelly melts. Stir in ketchup; mix well. Serve with corn dogs for dipping.

Eggplant Spread
1 medium eggplant, chopped into 1-inch chunks

1 large red bell pepper, seeded and chopped into 1-inch chunks

1 medium-small yellow onion, peeled and chopped into quarters

3 garlic cloves, whole

1 Tbsp. good olive oil put in spray bottle
kosher salt& freshly ground black pepper to taste

1 tablespoon tomato paste (if desired)Cooking Spray
1) Preheat oven to 400F.2) Stir eggplant, bell pepper, onion and garlic cloves together in a large bowl. Spray or drizzle with olive oil as evenly as possible, stirring a few times to coat. Add salt and pepper and toss. 3) Line a baking sheet with aluminum foil and spray with Pam. Spread eggplant mixture on it.
Roast about 25 minutes, and stir once for even browning. Roast an additional 20 minutes, until veggies are cooked through and browned well.
4) Let cool a few minutes, so it's not steaming hot anymore.5) Pour veggies into a food processor. Add tomato paste. Pulse a few times to get to the consistency of your liking. Salt and pepper to taste.

Recipe
Spanish Rice
2 tablespoons olive oil (can use up to 1/4 cup)
1 onion, chopped fine
1 garlic clove, minced
Pinch of oregano
1 teaspoon salt
2 cups of medium or long-grain white rice
3 cups* chicken stock (or vegetable stock if vegetarian)
1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained
In a large skillet brown rice in olive oil, medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, about 4 minutes, or until onions are softened.
2 In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package. Turn off heat and let sit for 5 minutes.

½ cup all-purpose flour

1 teaspoon cornstarch

¼ teaspoon salt

3 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

¼ teaspoon salt

1/4 teaspoon cinnamon

1 cup cold unsalted butter, cut into small pieces

1 egg, lightly beaten

1/2 teaspoon vanilla extract
Cinnamon and sugar-for sprinkling on top of the bars
Preheat the oven to 375 degrees F. Spray a 9×13-inch baking pan with cooking spray and set aside.
2. To make the rhubarb filling- place the rhubarb in a large bowl and sprinkle with lemon juice. Mix gently. In a separate bowl whisk together flour, cornstarch, sugar, salt, cinnamon and nutmeg. Add mixture to the rhubarb and stir to combine. Set aside.
3. For the dough-in a large bowl whisk together the flour, sugar, baking powder, salt, and cinnamon. Cut in the butter with a pastry blender until butter is mixed in, but you still have small chunks of butter. Mix the vanilla and egg together. Add into the flour and butter mixture and combine. The dough will be crumbly. Pat half of the dough into the prepared pan.
4. Spread the rhubarb mixture evenly over the bottom crust. Crumble the remaining dough over the rhubarb. Sprinkle with cinnamon and sugar.
5. Bake for 45 minutes, or until the bars are golden brown. Cool completely on a wire rack. Cut into squares and serve.
Makes about 24 bars

3 cups white vinegar

6 small hot chili peppers (optional)
Make a brine with vinegar, water and celery seeds.

2) Boil in a stainless steel pot or enamel.

3) Pack okra firmly in hot, boiled jars.

4) In each jar add 4 onions, 1 clove garlic and 1 chili pepper if using.

5) Pour boiling brine over veg leaving 1/4 inch headspace.

6) Process for 15 min in a boiling water bath at altitudes up to 1000 feet.

7) Let stand for 2-3 weeks before serving.

Mix Salt: Add salt to your measuring cup (or bowl) holding your water. Stir the solution gently until salt has dissolved. Combine: Into a medium bowl, add flour and lard. Work the mixture with your hands (it will only be sticky for a minute) until it comes to a fine crumble. If you're making 100 of these, go ahead and use the food processor, otherwise, it's not worth your time and your hands will bring the mixture together in a few seconds. Just smoosh and moosh until it's all crumbly and an even texture.
Add Water: Pour 2/3 of your water into the dry mixture. Stir with a fork until mixture is chunky. Add remaining water (if needed) until combined and turn out onto a floured board.
Knead & Divide: Knead gently until it comes together (5-10 times). Divide into 12 pieces. Place in a pan (or on a plate) and cover with plastic wrap (or a barely moistened towel) and allow to rest for 30 minutes.
Roll: Once the dough balls have had time to rest, one by one, roll them with a rolling pin until they are 7" (give or take) in diameter. Keep remaining dough covered while you work. Roll them one at a time and cook one at a time (unless you're using a griddle or more than one pan). You can pick them up with your hand (gently) and lay it across your palm to transfer it to the pan.
Heat: Heat a dry skillet over medium to medium high heat (cast iron works great!) and let each tortilla cook for 30-45 seconds. You're looking for brown, not burnt (if they cook too long you'll have tortilla chips!) so don't hesitate to remove when done. Cover with a warm towel until ready to serve.

Sprouts Salad
3-4 cups of sprouts (I ended up getting 5 cups out of my batch, and used them all)
4 ears of corn, shucked, with kernels removed4 roma tomatoes, diced (I discard the juicy center so the salad doesn’t get too wet)
1 red onion, diced
1 ripe mango, diced
3/4 cup chopped cilantro
2 teaspoons ground cumin
1 teaspoon ground coriander
salt and pepper, to taste
Bring a large pot of water to a boil. Drop in the corn kernels and boil for approximately three minutes. After three minutes, drop in the sprouts and boil for one minute more. You’re only boiling the sprouts to lessen their “raw” taste; don’t cook them for more than a minute or they’ll turn to mush! If some of the skins of the sprouts rise to the top, you can discard them (or keep them if you like).
Drain the corn and sprouts and set aside to cool. In a large bowl, combine all of the remaining ingredients

1 small onion, finely chopped
1/2 green bell pepper, finely chopped

1/4 teaspoon dried crumbled thyme
Cut the potatoes in half, cook in a saucepan of simmering water until not quite done and still firm, about 10 minutes. Rinse in cold water to stop cooking. Drain. Dice to 1/2-inch thick pieces. Set aside.Melt butter in a large cast-iron* skillet over medium low to medium heat. Add onion, cook until softened, about 4 minutes. Add the chopped bell pepper, cook another 2 minutes. Recipe

Sausage And Egg Casserole
2 pounds sausage
8 slices white bread
12 ounces shredded cheddar cheese
4 eggs
2 1/2 cups milk
1 tablespoon of prepared mustard
Salt and pepper to taste
Cube the slices of white bread, removing the crust, if desired.
Line a 9” x13” casserole dish with bread cubes. Spread shredded cheddar on top of the bread.
Brown and crumble the sausage in a saucepan. Drain and spread over the cheese.
Crack eggs into medium mixing bowl and beat lightly.
Add milk, mustard, salt, and pepper. Pour over the top of the casserole.
Bake at 350 degrees F for an hour.
This can be prepared a day ahead of time. Simply cover and refrigerate before baking.

How to Make Dried Tomatoes in your oven

Preheat oven to 200 degrees Fahrenheit.
Arrange oven racks to allow air flow top and bottom. I use 4 cooling racks, 2 on each oven rack.
Slice tomatoes in half lengthwise and arrange skin side down on the cooling racks side by side, not touching. I arrange mine crosswise to the wires on the cooling racks so they won't slip through between the wires as they dry and shrink.
Sprinkle lightly with sea salt or Kosher salt.
Arrange tomato-filled racks on oven racks, and start timing.
After 2 hours, start checking tomatoes for dryness. Remove tomatoes as they dry.
Cool on paper plates or towels, then transfer to storage containers.

Preheat the oven to 375 degrees and bake the rolls 20-25 minutes or until light golden brown.

16 ounces Cherry Pie Filling -- (1 can)16 ounces Crushed Pineapple in juice -- undrained1 package White Cake Mix -- 1/2" cubes1 cup Butter or Margarine -- melted1 cup Coconut Flakes1 cup Chopped Walnuts -- (or pecans)Prepare a 9 x 13 baking pan with non-stick cooking spray. Dump pie filling into bottom and spread over bottom. Dump in pineapple and spread over cherry pie filling. Add dry cake mix by sprinkling on top, and even out; pour melted butter over dry cake mix as evenly as possible. Sprinkle coconut and walnuts over mixture. Bake at 350 degrees F. for 1 hour.
