Recipe
Ginger apple Walnut upside down cake
3 tablespoons unsalted butter, melted and cooled
1/3 cup brown sugar
2 tablespoons crystallized ginger, finely chopped
2 medium apples, peeled and thinly sliced
1 tablespoon lemon juice
1/2 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt2 eggs
1/3 cup sugar
1 teaspoon vanilla
1/4 cup walnuts, finely chopped
Preheat the oven to 375 degrees F.
2. Combine the butter, brown sugar, and ginger in a small bowl, then pour into the bottom of an 8 x 8-inch baking dish. Toss the apple slices with the lemon juice and then lay across the top of the butter mixture.
3. Sift together the flour, baking powder, and salt. Cream the eggs with the sugar and vanilla until light, about 4 minutes.
4. Fold the flour mixture into the egg mixture and stir in the walnuts. Pour the batter over the apple slices and bake for 20 minutes or until a tester comes out clean. Allow to cool in the pan placed on a rack, for 15 minutes. Run a knife around the edge of the pan and invert the cake onto a serving plate.

Recipe
Peanut Butter Bars
1 cup reduced fat creamy peanut butter
3 tablespoons butter or margarine, softened
1 cup powdered sugar
3 tablespoons fat free milk
3 cups Rice Krispies®
or 3 cups Cocoa Rice Krispies®
1/4 cup semi-sweet chocolate morsels, melted
. In large mixing bowl beat peanut butter and butter on medium speed until combined. Add powdered sugar and milk. Beat until fluffy. Stir in KELLOGG'S RICE KRISPIES cereal, mixing until thoroughly combined. Press mixture evenly into 8 x 8 x 2-inch pan coated with cooking spray. Refrigerate until firm.2. Drizzle chocolate over cereal mixture. Refrigerate about 30 minutes or until chocolate is set and cereal mixture is firm. Cut into bars. Store in airtight container in refrigerator. Yield: 24 bars

Facts
The Pilgrim leader, Governor William Bradford, had organized the first Thanksgiving feast in the year 1621 and invited the neighboring Wampanoag Indians also to the feast. The first Thanksgiving celebration lasted three days.
President George Washington issued the first national Thanksgiving Day
Proclamation in the year 1789 and again in 1795.
President Franklin D. Roosevelt restored Thursday before last of November as Thanksgiving Day in the year 1939. He did so to make the Christmas shopping season longer and
hus stimulate the economy of the state.
Congress passed an official proclamation in 1941 and declared that now onwards Thanksgiving will be observed as a legal holiday on the fourth Thursday of November every year.

Tip
The day before
peel the potatoes, place them in a bowl of water, and then put them in the refrigerator. This way, they won’t oxidize and turn brown. When you are ready to cook your potatoes, simply drain off the water and cook them like normal.

Recipe
jalapeno and cheddar dip
8 ounces of fresh jalapeno peppers
1/ 3 cup of sour cream
2 cups of shredded smoked cheddar cheese. 1 tablespoon of prepared horseradish 1 large clove of fresh garlic
Cut your jalapenos and de-seed them for a mildly seasoned dip. If you really want some intense heat then add some of the seeds to your dip while cooking.
Chop your jalapeno peppers and garlic finely. Place the smoked cheddar cheese in a double boiler and cook until the cheese is completely melted.
Add your jalapenos, sour cream, garlic and horseradish and stir for your really good jalapeno and cheddar dip.
Cook on low heat until the peppers have begun to soften, stirring regularly. Pour out into a heated bowl and serve immediately.

Recipe
Pork or Chicken Adobo
2-3 pounds boneless pork or chicken breast
3 cloves garlic, minced
1 yellow onion, sliced
½ cup soy sauce (I like Kikkoman's the best. I feel it gives the dish the best flavor and that others will change the outcome of the dish)
¼ cup vinegar (Any vinegar will do. I like to add a little balsamic and white vinegar. You may use more vinegar if desired.)
1 cup water
¼ teaspoon crushed red boonie peppers
1 tablespoon whole black peppercorns
Pop all ingredients into the slow cooker and cook for 8-10 hours on low. That's it! The meat is fork-tender and extremely flavorful with the vinegar and peppers.
Serve the meats and the sauce with sticky white rice.
