Recipe
Brown Sugar cashews cookies

1 cup firmly packed brown sugar
1/2 cup BUTTER softened
1 EGG
1 teaspoon vanilla
2 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/3 cup sour cream
1 3/4 cups cashew halves
Frosting
1/2 cup BUTTER
2 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla
Heat oven to 350°F. Combine brown sugar and 1/2 cup butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating until well mixed. Reduce speed to low. Beat, adding flour, baking powder and baking soda alternately with sour cream, until well mixed. Stir in cashews.Drop dough by level tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 10 to 12 minutes or until golden brown. Cool completely.Melt 1/2 cup butter in heavy 1-quart saucepan over medium heat. Continue cooking, stirring occasionally, until butter foams and just starts to turn golden (4 to 6 minutes). (WATCH CLOSELY.) Immediately remove from heat. Pour into medium bowl; cool 5 minutes.Add powdered sugar, milk and vanilla; beat until smooth. Frost cooled cookies. Top with cashew half, if desired

Recipe
Cranberry Apple cobbler
1 1/2 cups cranberries, picked over1 Granny Smith apple, peeled and sliced thin
1 tablespoon freshly grated orange zest (optional – I only use it if I have an orange around)
1/2 cup firmly packed light brown sugar
1/4 teaspoon cinnamona pinch of ground cloves
1/2 cup plus 1 tablespoon all-purpose flour
1 tablespoon unsalted butter, cut into bits
1/2 teaspoon baking powder
1/4 teaspoon salt2 tablespoons unsalted butter
1/3 cup plain yogurt
1/2 teaspoon granulated sugar
vanilla ice cream, to accompany
Preheat the oven to 400 degrees F.
Mix together the cranberries, the apple, the zest (if using), the brown sugar, the cinnamon, the cloves, and 1 tablespoon of the flour. Divide among two individual gratin dishes or two 1 1/2 cup ramekins and dot the tops with the butter.
In a bowl stir together the remaining 1/2 cup flour, the baking powder, and the salt. Cut in the butter until the mixture resembles coarse meal, then stir in the yogurt (the dough will be sticky.)
Drop the dough by spoonfuls onto the cranberry mixture, sprinkle it with the granulated sugar, and bake the cobblers for 30 minutes, or until the tops are golden. Serve the cobblers with vanilla ice cream.

3/4 cup packed brown sugar
6 tablespoons butter or margarine
3 tablespoons light corn syrup
1/4 teaspoon baking soda
4 cups Corn chex cerealChex® cereal
4 cups Rice Chex® cereal
1/4 cup semisweet chocolate chips
Cover cookie sheet with waxed paper. In large microwavable bowl, microwave brown sugar, butter and corn syrup uncovered on High 1 to 2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved. Stir in cereals. Microwave on High 3 minutes, stirring each minute. Spread on cookie sheet to cool, about 10 minutes. Break into bite-size pieces. In microwavable bowl, microwave chocolate chips uncovered on High about 1 minute 30 seconds or until chocolate can be stirred smooth (bowl will be hot). Drizzle chocolate over snack. Refrigerate about 30 minutes or until chocolate is set. Store in airtight container.

Roll ups or quesadillas
SOUTHWESTERN CHICKEN FILLING
4 oz. block of cream cheese, softened
½ cup finely chopped cooked chicken
½ cup grated Monterey Jack cheese
2 tbsp. finely chopped green pepper
2 tbsp. finely chopped red pepper
2 tsp. chopped fresh parsley (or 1/2 tsp. flakes
)1 tsp. chili powder
1/8 tsp. salt
2 flour tortillas (9 inch diameter)
Southwestern Chicken Filling: Combine first 8 ingredients in medium bowl. Makes about 2 cups filling.Spread about 1 cup filling evenly on 1 tortilla, almost to edge. Roll up tightly, jelly roll-style. Repeat with remaining filling and tortilla. Wrap rolls with plastic wrap. Chill for 2 hours. Discard plastic wrap. Trim about 1/2 inch from both ends of each roll.
