1/4 + 1/8 teaspoon(s) CHERRY FLAVORED UNSWEETENED KOOL-AID

2 1/2 cup(s) CRUSHED ICE
DIRECTIONS
Pour 1 cup of the club soda into a blender.Add the sugar, Kool-Aid and cherry extract.Blend this until all of the sugar is dissolved.Add the crushed ice and blend on high speed until the drink is a slushy, smooth consistency, with no remaining chunks of ice.Add the remaining 1 cup club soda and blend briefly until mixed.If necessary, put the blender into your freezer for 1/2 hour.This will help thicken it up.After 1/2 hour remove blender from your freezer and again blend briefly to mix.Makes one 32 ounce drink

Chicken fingers
Ingredients
12 ounces skinless, boneless chicken-breast halves
1 egg, slightly beaten
1 tablespoon honey
1 teaspoon prepared mustard
2 cups cornflakes, finely crushed
Dash of black pepper
1. Preheat oven to 450 degrees F. Cut chicken into 3-by-3/4-inch strips. In a shallow dish, combine egg, honey, and mustard. In another dish, stir together cornflake crumbs and pepper.
2. Dip chicken strips into the egg mixture; roll in crumb mixture to coat. Arrange chicken strips on an ungreased baking sheet.
3. Bake about 12 minutes, or until outsides are golden and chicken is no longer pink.

Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add enough ice to cold water to make 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. WHISK in COOL WHIP. Stir in chopped berries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust. REFRIGERATE 6 hours or until firm. Top with sliced berries.

Recipe
Cajun Oven Fried Potatoes

4 large white potatoes, peeled and cut into wedges
1/2 tsp salt
1/4 ground white pepper
1/4 tsp ground black pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp ground cumin
1/8 tsp cayenne pepper
5 Tablespoons oil, divided

Peel and cut the potatoes into wedges. Place cut wedges into a bowl of hot water to soak. Allow to soak for 10 minutes or more.

In a bowl, combine the salt, peppers, onion and
garlic powders, cumin and cayenne pepper.

Oil the baking pan with 4 Tablespoons of oil. Sprinkle the spice mixture over the oil.

Drain the potato wedges thoroughly and pat dry. Toss with the remaining tablespoon of oil to coat each wedge in a thin layer of oil.

Spread the potatoes onto the baking pan in a single layer.

Bake until the bottom of the potatoes are golden brown about 25 - 30 minutes.

Using a metal spatula, flip the potatoes over. Continue baking until the remaining side is also golden brown.

Drain fries on paper towels and serve.

Zucchini Upside Down Corn Bread
2 medium zucchini -- unpeeled
1/2 pound Italian sausage - removed from casings
1/4 cup chopped onions
8 ounces corn muffin mix
1/2 cup shredded cheddar cheese
Coarsely shred enough zucchini to make 1/3 cup; set aside.
Cut remainder into 1/4-inch slices.In skillet, over moderate heat, brown sausage; crumble well. Leaving drippings in skillet, remove sausage to drain. Reduce heat. Add onion and zucchini slices to pan. Cover and cook over medium-low heat until slightly tender, about 5 minutes, stirring twice and gently.In a well-sprayed 8x1-1/2 inch round cake pan, starting in center of dish, arrange cooked zucchini slices in concentric circles using all of the slices.Set oven temperature to 350º

Make the corn muffin mix according to package instructions for Johnnie Cake. Add cheese, crumbled sausage, and shredded zucchini to cornbread batter. Spread mixture evenly over the zucchini slices.Bake for 25 minutes (more or less) or till top is golden. Using a spatula, loosen sides of corn bread from dish; invert onto a serving platter. Let it stand a little. Makes 6 wedges. Serve warm.
